Prep the Sweet Potatoes

Assemble Quesadillas
- In a bowl, combine the roasted sweet potatoes, black beans, shredded cheese, and lime juice. Mix gently to distribute evenly.
- Place a tortilla on a flat surface, spoon half of the filling onto one half, then fold the tortilla over to create a half‑moon shape. Repeat with remaining tortillas.
Cook Quesadillas
- Heat a large skillet over medium heat and lightly coat with cooking spray or a drizzle of olive oil.
- Place a filled tortilla in the skillet. Cook for 2‑3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is melted.
- Transfer the cooked quesadilla to a cutting board, let rest for 2‑3 minutes, then cut into wedges.
